It’s been such a busy, stressful couple weeks with filled with house renovations and work. This has made it hard to make any interesting food for my lunches. Usually its just salad.
The solution to lunch boredom is leftovers! Today I’m having left over smashed sweet potatoes with lettuce from my friend’s garden.
Here it is:
It’s easy, I just packed lettuce and took the potato in the container it was already in. A couple minutes in the microwave and the potato’s ready!
This is how I made the sweet potato last night:
- Wash 3 small sweet potatoes and cut into chunks.
- Steam together with half a lemon until potatoes are cooked.
- While cooking, finely chop small bunch of fresh coriander with about 30 grams feta cheese.
- When cooked transfer to bowl, squeeze lemon over potatoes, and mix together with coriander and feta, smashing potatoes as you go.
